Grilled Smokey Skirt Steak with Cucumber, Mango Salad

I L-O-V-E skirt steak. It has a wonderful amount of marbling (read: flavor) and does really, really well charred up on the grill. So what is skirt steak? It’s the diaphragm muscle of the cow, located right next door to the flank steak. It’s usually cheaper than flank steak. If you can’t find a skirt steak, feel free to substitute flank steak or any other meat you like to grill!

The rub was inspired by my disdain for dry rubs that involve combining 200 different ingredients and then turns out tasting like–um, nothing. So here it is, 3 ingredients; the star being smoked paprika. I would like to rename this: powdered bacon.

Ingredients

  • 2 1/2 lbs. skirt or flank steak
  • 4 T smoked paprika
  • 1 t salt
  • 1 t pepper

Method

Rub the ingredients on both sides of the steak. Place on a preheated grill and let cook for about 12 minutes…that’ll get you a nice medium rare.

Ingredients

  • 2 mangoes, cubed
  • 1 English cucumber, cubed
  • 1/2 red onion, finely diced
  • 2 limes, juiced
  • handful of mint, chopped
  • S&P

Method

Combine all ingredients. Let marinate in the fridge for a few hours or eat immediately.

  1. I thought vinegar is a non-paleo item?

  2. well, there is not vinegar in this recipe. but we do use it. and whether or not it was available in the Paleolithic, probably not. Cordain, i believe has most famously villified vinegar. we aren’t after a paleo reenactment here (ie. it has to have been available then, for sure, to eat it). this would be very hard to do anyway. as many if not all of our modern foods are really just approximations to something that is technically paleo (think: grass fed beef). we feel happy in the area where paleo theory/evolutionary biology/ anthropological evidence meets science. this usually means that grains, an abundance of fructose, and seed oils (omega 6) are out. but leaves some things like salt, dairy, vinegar, etc. in sort of a gray area. not quite quote, unquote Paleolithic, but maybe Paleo in the sense of “old”…and things that science can’t find major fault with. i believe the main concerns of vinegar through a scientific scope would be yeast (if you have a yeast problem in your gut) and possibly an acid/base balance in your body. in the amounts vinegar is usually consumed in…and with vegetables and other alkalizing foods in a paleo diet…i haven’t seen anyone really be too worried about vinegar. including robb wolf and others.
